Grown in a single grove along the old road to Alexandria, the city of Cleopatra and Alexander the Great, the olives thrive under the Egyptian sun. This extra virgin olive oil by Rammah Farms, lab tested for authenticity, is pressed from Coratina olives: single origin, first cold pressed. Pressed fresh from the exceptional December 2024 harvest and bottled in UV protected 500ml tins, it holds its character through its full life: a green-gold, full-bodied oil with the slow peppery finish that is the Coratina signature, the mark of an unblended, polyphenol-rich oil. Our Coratina is certified Extra Virgin, the highest grade of olive oil, meaning it's cold-extracted purely by mechanical means, with no heat or chemicals, and an acidity level well below the strict 0.8% threshold that the grade demands. It comes from a single grove of Coratina olives, prized for their robust, peppery character and naturally high level of antioxidant polyphenols. Each harvest carries a Certificate of Origin, verifying the oil is genuinely Egyptian and traceable back to its source grove.
It's also independently tested by FDSC, an ISO/IEC 17025-accredited laboratory. We screen for pesticide residues using the EN 15662 method (LC-MS/MS and GC-MS/MS), and we test for heavy metals — arsenic, lead, cadmium, and mercury — by atomic absorption spectrometry.
The results: Certified Extra Virgin, genuine Egyptian origin, no pesticide residues detected, and no arsenic, lead, cadmium or mercury detected.
Why this matters: Extra virgin is the most adulterated category in the oil aisle, often cut with cheaper refined oils or mislabelled on grade. By certifying the grade, confirming the origin, and testing every harvest for contaminants, we know our oil is as pure as it is flavourful.

Somewhere dark, with the lid closed tight. Light and air are what age an olive oil — a cupboard away from the hob keeps the colour, the polyphenols and the flavour intact.
Shelf life
Best within 2 months of opening, while the peppery freshness is at its peak. Two years unopened from pressing date, stored cool, dark and tightly capped.
How to use
Good in the pan and just as good off it — drizzled over warm bread, leaves, soup or labneh, or used to cook with, where the pepper and bright notes come through. The flavour holds up whether it's heated or poured over at the end.
