Dates and honey have shared a table in Egypt for a very long time. Linah Farms Medjool dates and Boosh the Beekeeper raw clover honey are the modern version of a pairing that predates most of what we think of as cooking — two of the oldest sweet things people have, set side by side.

The reason they work is contrast within sweetness. Linah Farms grows its Medjool dates in the Bahareya Oasis and handpicks them at peak ripeness; the fruit is dense, chewy, deep with caramel. Boosh the Beekeeper slow-harvests the clover honey in the Egyptian countryside and whips the raw version soft, so it spreads light and floral. One is heavy and dark, the other bright and airy. Together they cover the whole range of sweet in a single bite.

There is an everyday way to enjoy it: split a date, add a small spoon of the creamy raw honey, and eat it with strong coffee or black tea. There is also a more generous way — dates and honey laid out as part of a spread, the way they have always appeared at Egyptian gatherings, where sweetness is a form of welcome rather than a course.

Both producers hold to the same standards. Linah Farms is a Muslim-owned producer in Egypt and the dates are Halal, grown with no pesticides and no added sugar. Boosh the Beekeeper's honey is 100% natural with no additives. Nothing here is doing anything but being itself.

It is not a clever pairing. It is an old one, which is usually the higher compliment — the combinations that last are the ones that were right from the start.
