Boosh the Beekeeper slow-harvests the clover honey in the Egyptian countryside — gentle in flavour, clean in ingredients, the kind of honey that lifts a soft cheese without burying it. A spoonful over warm brie, or trickled across a wedge of blue, is the easiest upgrade a board has.
Rammah Farms grows the Coratina olive variety in the Egyptian sun and cold-presses it at first press. The oil pours green-gold and finishes peppery, with bright notes of citrus and green apple. Poured into a dish for dipping, it does for the hard cheese and the bread what the honey does for the soft — adds depth without taking over.
Put them at opposite ends of the board and let people move between them. Walnuts and figs sit happily in the gap; a few Linah Farms Medjool dates do the same if figs are out of season.

- Rammah Farms Coratina extra virgin olive oil
- 1 aged hard cheese and 1 soft cheese
- A handful of walnuts
- Fresh figs or Linah Farms Medjool dates
- Crusty bread, torn
Method
- Bring the cheeses to room temperature for half an hour so the flavours open up.
- Arrange the cheese, walnuts, and figs or dates loosely on a board with the torn bread.
- Spoon the clover honey into a small dish and set it beside the soft cheese.
- Pour the Coratina olive oil into a second dish for the hard cheese and the bread.
- Drizzle a little honey over the soft cheese just before serving, and leave the oil for people to dip into.
