The short answer: a cool, dark cupboard, sealed, keeps Medjool dates soft for months. The fridge is for warm weather, not for default storage, and it firms the flesh if you leave them there too long.

Linah Farms grows its Medjool dates in the Bahareya Oasis, deep in Egypt's Western Desert, and slow-ripens them under the Egyptian sun before they are handpicked at peak ripeness. That ripeness is the whole point of the fruit — plump, yielding, deep with caramel sweetness that comes from the date itself and nothing added. The job of storage is simply to hold that texture where the harvest left it.

Air is the enemy, not time. A date left open to the kitchen slowly gives up its moisture and turns firm at the edges. Sealed in an airtight container, the same date stays soft far longer than most people expect. Keep it out of direct sun and away from the warmth of the hob, and the cupboard does the rest.

If a batch does firm up, it is not lost. A few minutes near gentle warmth, or a date chopped into something cooked, brings the softness back. And if your kitchen runs hot through the summer, the fridge is a fair safe harbour — just let them come back to room temperature before serving, where the flavour opens up again.

Stored well, Linah Farms Large Medjool Dates keep their character from the day they arrive: soft in the middle, a quiet note of dark toffee on the finish, ready for a small cup of coffee or a corner of the cheeseboard.

What you need

  • Linah Farms Large Medjool Dates
  • 1 airtight container or sealed jar

Method

  1. Tip the dates into an airtight container or a jar with a tight lid, leaving them whole and unwashed.
  2. Keep the container in a cool, dark cupboard, away from the hob and any direct sun.
  3. Leave the fridge for warm weather only — cold firms the flesh, so bring chilled dates back to room temperature before serving.
  4. Check the seal each time you reach in; an open bag is what dries a date out, not time itself.
